Guillaume Guibet

At the edge of the Coharde woods, Guillaume Guibet has transformed the former Rothschild estate into a Michelin-starred, eco-friendly property. Inventive cuisine, eco-designed houses, a redesigned vegetable garden... and soon, new rooms in the former stables.
You could say that his grandfather had a keen eye when he acquired this former Rothschild family property in the 1980s, located on the edge of the Coharde woods, which had been a brothel and then a restaurant. His parents quickly took over the reins, and Guillaume arrived in 2016, after cutting his teeth, notably with chef Kei Kobayashi. With his dishes that readily take unexpected turns but remain perfectly aligned and balanced, he earned his first star at the age of 25, making him the youngest starred chef of the 2021 class. Nothing seems to be able to stop his thirst for achievement. He began with a contemporary extension to bring light to customers and comfort to the staff. Then came five completely independent eco-designed and eco-built houses, some with Nordic baths, some ideal for families. He took the opportunity to completely redesign the garden and improve the vegetable garden. And already, with the paint barely dry, he is planning to open new rooms in the old stables... And there, behind the stone wall: the forest. All that's left to do is hop on a bike and set off with a (chic) picnic basket provided by the chef.
