Les Sources de Vougeot

While Cistercian monks shaped Burgundy as we know it today—with its vineyards, climates (listed as a UNESCO World Heritage Site since 2015), castles, abbeys, and priories that seem to accentuate the landscape—it still needs to be reinvented today, given the energy that sometimes seems to be lacking... The Cistercians built the Château de Gilly, and Alice and Jérôme Tourbier have turned it into an exceptional residence. After Bordeaux, where they launched the Collection des Hôtels du Vignoble in 1999 with Les Sources de Caudalie, then the Loire Valley in 2020 with Les Sources de Cheverny, it seemed obvious that one day they would find the perfect setting in Burgundy. They would breathe the charm of a family home into a historic residence in the heart of the vineyards—their signature. So? So, in the heart of the Côte de Nuits, between Beaune and Dijon, a 14th-century château remodeled in the 17th century; decor by A.S.L Architecture, subtle and respectful as usual, combining with impeccable taste ogival vaults and English green velvet, French ceilings and Piere Frey wallpaper, frescoes by Jeanne Lamandie or Sophie d'Estève, and Louis XV armchairs upholstered in powdered velvet; an XXL spa housed in what was once the cellar of the monk builders; Finally, two restaurants—one of which has clear gastronomic ambitions!—joyously and brilliantly led by chef Julien Martin, who returns to these lands (he was born in Avallon). These Sources, bordered by the Vouge River, clearly set the tone: that of a visionary Burgundy that celebrates its heritage as much as it looks to the future.
