Bistrot Jean Jaurès
Chez
Bertrand Lacroix et Anne Leduc
Unexpected flavors and textures await at this unique micro-restaurant, reserved for the curious and those who love surprises (single menu), featuring fish with bold flavors and precise cooking techniques.
A French-Quebecois couple running a radical bistro: Bertrand Lacroix and Anne Leduc have transformed the old, exuberant A Carioca into an intimate restaurant dedicated exclusively to line-caught fish and local vegetables. Twenty seats maximum, including four at the counter, vintage decor, no menu—that's the concept. No fridge, no freezer—that's the plate. Fish and vegetables arrive every morning from the Talensac market to feed a unique three-course menu at lunchtime and five courses in the evening. The secret lies in the maturation of the fish, whose flavor and iodine are concentrated before being cooked in a charcoal oven. On the counter, mysterious jars hold lacto-fermented vegetables, while in the cellar, the wines breathe... A place for attentive taste buds.
