Above the wood-clad façade, you can still see the sign of the previous occupant, Le Vinci, a PMU bar well known in this neighborhood in Lille. This is where Valentina Giacobbe and Julien Ingaud-Jaubert opened Ginko, their first restaurant — a place that has nothing to do with a PMU!
Both trained in excellent kitchens: they worked for Pierre Gagnaire (where they met), then in the Lille region — she at Rozo as sous-chef, he at the Clarance Hotel and La Laiterie as pastry chef. These experiences convinced them to stay in the region. And even though they had considered moving away from a gastronomic concept, they eventually realized that it was part of their culinary DNA. They made the right choice: just one year after opening, they were awarded a Michelin star. At Ginko, you enjoy delicate cuisine — clearly gastronomic, yet without pretension or fuss. Built on a well-mastered classical foundation, they modernize their dishes with unexpected condiments and seasonings. Like this raw scallop coated in a coral and carrot-kimchi powder, served with a lemon marmalade whipped with olive oil and chili.
A cuisine that reflects this endearing couple: both humble and incisive, rooted and adventurous.
