A stone's throw from Mont-Saint-Michel Bay, between land and sea, where the countryside becomes wilder and more secretive, chef Thomas Benady and Jessica Schein have taken over a 16th-century presbytery. They have transformed it into a gourmet, contemporary inn. Here, the sea air and the bocage meet and collide. At Auberge Sauvage, the cuisine is unique, radical, and precise, and the welcome is warm, spontaneous, and full of enthusiasm. Thomas forages, works with local artisans and producers, and, as you might expect, celebrates both nature and people. A rare find, a little extreme for some (the website recommends not wearing perfume “to avoid olfactory interference”), but definitely worthwhile for others.
