Les Filles en Bottes

In the heart of a beautifully green countryside in the warm season, Saint-Georges-de-Reintembault, a peaceful, seemingly carefree and off-the-radar commune, almost forgotten, a quiet street, an elegant long house, a modest sign and a menu pinned to the gate confirm that we have arrived at the Auberge des Filles en Bottes, a restaurant and guesthouse that has placed naturalness at its core. A frank, direct and warm welcome from Louise. Lénaïck, behind the kitchen counter, is meanwhile focused on plating her dishes. This inn is their first project, they having retrained five years ago and radically changed their lives, Louise into market gardening and Lénaïck into cooking. Suffice it to say that today they have their feet firmly planted in the land. The land of their new territory, which they love to roam, the land where they like to gather wild flowers and herbs, the well-nourished soil that grows good produce. Rooted in their convictions, standing firm in their boots. Here, the cuisine necessarily follows the rhythm of the seasons, more or less abundant, more or less generous. They have therefore learned to compose with both abundance and monotony: the product is authoritative and it cannot be otherwise. This is what Louise and Lénaïck demonstrate through dishes where simplicity, humility and indulgence prevail. Creativity and high standards move in the same direction. Such as in this starter where garden flowers immediately bring a gustatory poetry to the plate. Or again with this stuffed cabbage, offered in two versions, animal and plant-based. The menu is fixed and changes every two weeks. For travelers staying in the guesthouse, admiring the sunrise and sunset from the meadow behind the garden is an invaluable luxury.
