Brothers
Chez
Tobias & Markus Klaas & Daniel Bodamer
This is a rock ‘n’ roll spot where the cuisine doesn't take itself too seriously but is still treated with great respect. In this relaxed atmosphere, the dishes come out one after another, with clever nods to French gastronomy in particular.
They went from guitar and drums to kitchen piano—with almost no transition. At home on a metal, reggae, or ska stage, twins Tobias and Markus Klaas now play their own concert of pots and pans. Brothers, which opened in December 2022, is the fulfillment of their dream. After several years in Michelin-starred restaurants, Tobias, a sommelier, and Markus, a maître d'hôtel, wanted to create a chic brasserie, without tablecloths or fuss, serving dishes with a distinct flavor but not in the “gourmet” category. From that point of view, it's a failure. Three and a half months after opening, chef Daniel Bodamer earned a star. This former chef at Tantris (Munich) and Le Clarence (Paris) offers a modern, feel-good menu with a technical twist. Here, the focus is on the product above all else, whether local or not (which is our only slight criticism). The chef skillfully bridges techniques and cultures and knows how to win people over with his Parisian-style gnocchi. In the dining room, the music doesn't take the elevator: it reigns supreme thanks to a clever indie and electro playlist.
