A culinary dialogue that began in Lyon and continued in Biarritz: Adrien Zedda and Thomas Bouanich combine an open kitchen, an XXL mural, an impressive wine cellar, a marble counter, and a commitment to local producers for a unique Basque experience.
They began this dialogue a few years ago in Lyon. It was a conversation that did not go unnoticed, that earned them some well-deserved praise, that shook things up with a 100% plant-based approach in a city of meat-eaters. It was a conversation they wanted to continue in Biarritz. Their only reason for doing so was to offer their families a more relaxed lifestyle. Adrien Zedda and Thomas Bouanich designed their restaurant in two stages, with a gourmet section centered around an open kitchen and a dining cellar, more accessible with dishes to share. With the local agency Le Vivier, they called on the Ziat workshop to create a sublime XXL fresco covering the wall opposite the backlit marble counter, sourced and brought together the best of local producers, They moved a very impressive cellar that offered more than 500 references from the moment it opened, incorporated a marine theme (we are on the Basque coast, after all!), and brought in an outstanding pastry chef, Margaux Boisson (also a former Culina Hortus employee). The result is a concept full of poetry, liveliness, and spirit, ambitious, technical (sometimes too much so), quick to wink (dialogue, of course!), and sure of itself. There is no doubt that here too, the duo will give the gastronomic scene a serious boost.
