At the end of a winding, bucolic road, Les Jardins de la Matz unfold across a majestic estate. In ten years, while they have become a benchmark for organic micro-farming, they are also known for their guest rooms and a table full of boldness and flair, entrusted to a self-taught chef.
It’s as much a matter of meeting as it is of the stars aligning. Before becoming a chef, Caroline was first a guest at the guest rooms of Les Jardins de la Matz, launched by Jérôme and Hélène. Inspired by the principles of Jean-Martin Fortier, the couple also transformed the property into a micro-farm where market gardening and permaculture are practiced organically, becoming a must-visit reference in the area. At the same time, Caroline embarked on a career change to become a market gardener; while training in the delicate art of growing plants, she discovered her path in cooking. Meanwhile, Jérôme and Hélène, encouraged by requests from guests of the gîte and the farm, decided to open a table d’hôtes. Their paths crossed again four years ago. Driven by a shared culture of good food, generosity, and pleasure, they decided to embark on the adventure together. Today, Caroline relies above all on the quality of the product—grown with care and harvested at just the right moment. For everything else, she follows her instincts. Inventiveness and creativity are essential to adapt to the rhythms of nature and what it offers. In just a few years, Caroline has refined her plant-based repertoire, surrounded herself with carefully selected local producers, and developed an honest, simple, and harmonious cuisine, always as close and as true to the product as possible.
