In Arles, Céline Pham has set up shop in a former 13th-century chapel to open Inari. The cuisine is market-fresh, straightforward, and lively, combining French technique with Vietnamese influences and executed with true freedom.
She cultivated nomadism as a way of life for a long time before settling down and putting down her knives in this former 13th-century chapel. It could have been temporary, but since 2021, she has helped give Arles a new face, even becoming one of its emblems. Here at Inari, there is no fuss or fussiness; the dishes are as straightforward as possible. The technique is there, so masterful that it allows for a little improvisation, depending on the market (she defends and displays her desire to offer market-fresh cuisine), her mood, and the table. Nothing is set in stone. In each dish, you can sense that Céline Pham has earned her stripes, both in some of the finest restaurants of her time (Septime, for example) and in event catering. The hallmarks of a cuisine that skillfully blends French recipes and Vietnamese influences are perfectly clear, as are her ecological and societal convictions. Add to that a lovely natural wine list and a warm welcome orchestrated by her partner, Agathe de Buretel, and you have a combination that is both charming and striking.
