Haute-Bretagne, between Redon and the Rance Valley
Par Ina Chong, le 15 Jul 2026
What if, for this Breton escape, we resisted the obvious pull of the coast and chose instead to venture further inland — from Redon to the banks of the Rance, via Dol-de-Bretagne and Saint-Georges-de-Reintembault? In these places, often far from the well-trodden routes, new addresses are emerging and entire areas are reinventing themselves, driven by inspired projects that are each, in their own way, reimagining the art of hospitality — giving it substance, purpose and soul.

First ventures, career changes, the revival of a family farm — each of them found, across these hinterland Breton territories, spaces for possibility and experimentation in which to bring their visions to life. Everywhere, the challenge of how to welcome well and feed well sits at the heart of the conversation. In Redon, Samia and Pierre-Louis took over the family farm, reshaping it according to their values and aspirations. She had worked as a shepherd and farm labourer; he in the humanitarian sector. In 2021, they decided to write a new chapter for La Ferme de la Morinais: organic market gardening, and the breeding of hardy local sheep and poultry breeds. Here, taking over means embracing the local terroir and respecting natural ecosystems.

The same philosophy runs through Les Jardins de la Matz in Plouër-sur-Rance, which in just ten years has become a benchmark for organic micro-farming and living-soil cultivation. Four years ago, Caroline, a self-taught chef, launched the table here, offering a cuisine rooted in simplicity, precision and proximity to the produce itself. With Kabañ, Virginie chose to breathe new life into a traditional fisherman’s cottage by creating what she calls “the smallest third place in the world”, right in the heart of Saint-Suliac, tucked into the bends of the Rance. In the old stone lanes of this beautiful village, other gems emerge too, like Serge’s marine antiques shop. The former fisherman offers a trove of treasures and stories, guaranteeing a journey out of time. Entirely contemporary in spirit, La Renverse, the café-bookshop opened in 2023, shows that Saint-Suliac has no intention of living only through the tourist season, but all year round.
Further east, Pascaline and Marine, after training with some of the best, chose to open Dames, a fine dining restaurant in the shell of a former roadside eatery in Dol-de-Bretagne. Here too, the idea is to revive a historic table by making it entirely their own and transforming it into a gastronomic stop worth the detour. Precision cooking, with generosity. Further east still, Louise and Lénaïck left their native north after career changes — market gardening for one, cooking for the other. After exploring the entire region, they eventually found an old longhouse in a peaceful, green corner of Ille-et-Vilaine, where they opened Auberge des Filles en Bottes.
Everywhere, the same desire emerges: to reconnect what’s on the plate with a terroir, a season, and the people who produce it — because flavour begins with respect for the ingredient. Everywhere, one sees that feeding well and welcoming well belong to an art form where sincerity and authenticity cannot be faked. And everywhere, one realises that each of these places is, in truth, a destination in its own right.
Allez Hop off to bed, chez Virginie Brégeon
In the village of Saint-Suliac, one of the most beautiful in France, on the banks of the Rance, this address carries all the charm and historical depth of old houses—those that once sheltered fishermen who, two centuries ago, ventured as far as Newfoundland in pursuit of cod. While preserving its essence and heritage, Virginie has transformed the place into a singular, hybrid cocoon, with the ambition of offering, in the heart of Saint-Suliac, an in situ experience that is as authentic as it is inspired (…) Continue Reading
Allez Hop off to table chez Pierre-Louis Guérin & Samia Gharet
Nestled in countryside as peaceful as it is lush, La Morinais welcomes us in its most springlike light. A profusion of greens and flowers, birdsong, a perfect mix of sunshine and blue skies—right down to the terrace, set up again that very morning to fully savor this picture-postcard scene. A family farm since 1889, it is now in the hands of the fifth generation. Originally a dairy farm, it was transformed into an inn in the late 1980s, with guest accommodation, a campsite, and a restaurant. In 2021 (…) Continue Reading
Allez Hop off to table chez Jérôme & Hélène de Ségogne
It’s as much a matter of meeting as it is of the stars aligning. Before becoming a chef, Caroline was first a guest at the guest rooms of Les Jardins de la Matz, launched by Jérôme and Hélène. Inspired by the principles of Jean-Martin Fortier, the couple also transformed the property into a micro-farm where market gardening and permaculture are practiced organically, becoming a must-visit reference in the area. At the same time, Caroline embarked on a career change to become a market gardener; while training in the delicate art of growing plants (…) Continue Reading
Allez Hop off to table chez Marine Hervouet & Pascaline Albicini
When asked which dish best represents her cuisine among the five courses of the tasting menu, Marine answers without hesitation: “the scallops.” It’s easy to see why, as it was also the plate that struck and delighted us the most. A hand-dived scallop, fresh and full of flavor, cut into generous slices, served with apple, celery, and a nori churro. A study in complementary textures, a pursuit of the essence of flavors, and a sense of overall harmony. In a single bite, you taste generosity, precision, and springtime (…) Continue Reading
Allez Hop off to table chez Louise Lefebvre & Lénaïck Geffroy
In the heart of a beautifully green countryside in the warm season, Saint-Georges-de-Reintembault, a peaceful, seemingly carefree and off-the-radar commune, almost forgotten, a quiet street, an elegant long house, a modest sign and a menu pinned to the gate confirm that we have arrived at the Auberge des Filles en Bottes, a restaurant and guesthouse that has placed naturalness at its core. A frank, direct and warm welcome from Louise. Lénaïck, behind the kitchen counter, is meanwhile focused on plating her dishes (…) Continue Reading
Allez Hop, let’s shop Au Rocher du Corsaire
Before opening Le Rocher du Corsaire, Serge Le Louët spent 40 years as a fisherman — a career that saw him involved in every kind of catch. He was notably among those who brought scallop fishing back to Saint-Suliac in 2005. At the end of his first professional life, he decided to devote himself to his second passion by opening this marine antiques shop. A keen collector himself, and still actively hunting for finds, he now shares his discoveries with the public. The place is packed with maritime treasures, all with one thing in common: every single item has sailed. Fishermen’s boots, authentic oilskins, compasses, navigation instruments of every kind — each object here carries its own story of the sea and adventure, enthusiastically recounted by the owner himself.

Allez Hop, let’s stroll à La Renverse
After winning the municipality’s call for expressions of interest in 2023, Camille Foucher and Manon Durieux went on to open La Renverse, an entirely new kind of community hub in the village. Spread across 100 square metres, the space brings together an independent bookshop, a café-canteen, as well as areas dedicated to exhibitions, children and artists’ workshops, among other things. The bookshop, both independent and generalist, offers a thoughtfully curated selection of local authors and regional publishers. Regular talks and events are organised, alongside a variety of workshops designed to engage and bring together the local community. An initiative that is both inspiring and full of inspiration.
