Beautiful and good, because at Babel, France's first certified mission-driven hotel, which is home to this new dual-headed restaurant, they are committed to solidarity and responsibility. Beautiful and good, because both the Ernest food aid association, run by chef Maddalena Spagnolo, and La Cuisine de Souad, run by chef Tarek Idrissi, are deeply committed to their cause. So, for lunch and brunch, Souad will be treating guests to her Maghreb-inspired vegetarian recipes, while in the evening, with a five-course tasting menu, it will be Maddalena's turn to surprise. Her entirely vegetarian dishes are inspired by cucina povera. There is generosity everywhere and at every moment, right down to the smiles and good humor of an equally committed team. Above all, there is an incredible freedom that makes you want to trust them. And finally, there is the true art of doing things right, doing them well, and above all, doing good. And it feels good.
When shall we go?
Lunch at Souad's, Monday through Friday, and brunch on Saturday and Sunday.
Dinner at Ernest's, Tuesday through Saturday.
