In Marseille, Coline Faulquier takes over L'Épuisette and transforms it into Auffo. With views of Frioul, minimalist decor, and free-spirited, precise cuisine, she celebrates the Mediterranean with vibrant, sunny, and committed gastronomy. A new era dawns on the Vallon des Auffes.
Some followed her on the TV show Top Chef (season 7), while others, luckier still, knew her from her time in Marseille at the helm of Signature (renamed Les Lucioles with the arrival of Margaux Fary). Now (since early May 2025), she is at the helm of a new restaurant, located in the place of an institution. Since 1939, people have been coming here, to L'Epuisette, to celebrate life's events, the sea, Marseille... In partnership with The Social Club group, Coline Faulquier has been granted the concession for the next 10 years. She now has the opportunity to imagine, at Auffo, how to glorify this part of the south, the sea, fishing, the men and women, the warmth, the sun, and the wind that bring forth these smells and flavors. The ambitions are high, clearly gastronomic, and the means have been put in place, without ostentation. The wood is light, the shapes rounded, and white predominates, providing the perfect backdrop and highlighting the view of the tiny fishing port and, further out, the Frioul Islands. And Coline delivers her vision of the south's produce: committed, sparkling, almost seductive, pointillist, sometimes mannerist.
