In the Perche region, Amandine Chaignot has created Sauge, a restaurant with two sides: a lively bistro on one side and a more gourmet offering on the other. The cuisine is deeply local, sourced from her own garden and neighboring producers, where she rediscovers the essentials.
The most seasoned foodies knew her from the Plaza Athénée during Jean-François Piège's tenure, at the Ritz in London, and encountered her at Eric Frechon's, at Le Meurice during Yannick Alléno's tenure, at the Hôtel de Crillon during Christopher Hache's tenure, at the Hôtel Raphael... In short, before opening her first restaurant, Pouliche, in 2019 in Paris's 10th arrondissement, she had already gained a wealth of experience and honed her skills. At Pouliche, she immediately offered a bold cuisine that shook things up a bit, built on solid foundations and willingly broke the mold. Then came Café de Luce in the 18th arrondissement, Népita... and now this restaurant in the heart of the Perche region. Double, because on one side it offers a menu with a slightly bistro feel, and on the other a menu with a clearly more gourmet feel. The sourcing is very much local, and Sauge is undoubtedly part of a terroir, her terroir. Amandine has been able to count on her neighbor Tom Rial, a market gardener and founder of a farm in Le Perche. She also has a large walled garden, hidden behind the small church, where she grows fruit, herbs, and a few vegetables. This is where she “relaxes best before and after service.”
